"As You Like It" is one of the plays where it feels like Shakespeare was told "write something that has a happy ending without it being too political". It has some great lines, but the quality of acting really makes a difference in how the rhythm of the plot flows. I'm not surprised you found it kinda blah; like you said, everything gets resolved offstage and everyone gets married.
It's supposed to be social critique and affirmation, but I've always thought the play wasn't nearly as interesting as it could've been.
