You've reminded me of a fic that took the sensory change in interesting ways. That was an NCIS AU (incomplete and sadly abandoned as far as I know). Dinozzo became a werewolf and the team was helping him get adjusted and get through it. What I found interesting was that the story focused on adjustment, learning and training. There were whole sections about adjusting to physical changes and heightened sensory input in the human form. He got extremely fidgety, very hungry. Heightented sense of smell and speed were useful on a case, but he needed to train to not overload on the extra input. And during transformation, the focus wasn't just on the caging and feeding, but on the team learning how the werewolf thought, how he was learning about them, trying to see if they could communicate with him. Would have been interesting to see how the author would have developed it.
