What if someone he knew was in a cell there, or even if parts of them were in Adam? I mean someone had to know Adam when he was many. And Ethan associates with demons, so it wouldnt just be the human chunks he could know.
Something about the Initiative was compelling enough to him that he was in town risking his neck to talk to Giles about it. Something about the way Giles was acting got Ethan to turn him into a demon. Probably, I think, that Giles was being all 'Initiative, yaay!' when Ethan was trying to explain they were upsetting the balance of the universe. Given that Ethan does in one sense devote his life to religion then he doesnt really need a reason less abstract than that, but what if he actually had one?
I mean by making Giles a demon where the Initiative could see him he put Giles in a lot of danger. And then he outright told Buffy that the demon had killed Ripper, which would get her to try and kill it. The moment us 'shippers have the most trouble explaining.
What if there was someone Ethan cared about as much or more than he cares about Giles, and the Initiative has them? Giles being yaay would really piss Ethan off then, and getting Giles captured by the Initiative would get Buffy et al involved. When it turns out Buffy is already involved, on the wrong side, Ethan can get captured to end up in the Initiative facility with a few tricks up his sleeve. And even that works out wrong, because Nevada not Sunnydale.
I have trouble believing in any romantic attatchment that would matter to him more than Giles, because G/E forever. But I keep on coming back to the idea that Ethan would shag anything, including demons, and could therefore have half demon offspring. And what a man will risk for his own flesh and blood you cant know until it gets necessary.
Yes, this involves extrapolating very far from the text, so I'd never suggest this as a canon interpretation, but as a plot bunny it is rather interesting.
